Ingredients 

  • 4 cups torn arugula leaves
  • 1 cup diced fresh pineapple
  • ¼ cup chopped fresh cilantro
  • ¼ medium red onion, thinly sliced
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons maple syrup
  • ¼ teaspoon salt

Directions

  1. Mix arugula, pineapple, cilantro, and onion together in a salad bowl.

  2. Whisk vinegar, oil, maple syrup, and salt together in a small bowl; pour over salad and toss to coat.
