Stir Fried Pasta with Veggies

Ingredients for Stir Fried Pasta with Veggies:

  • 8 ounces spaghetti
  • 2 cloves crushed garlic
  • 2 tablespoons olive oil
  • 1 onion, sliced into thin rings
  • 2 skinless, boneless chicken breast halves – cut into bite-size pieces
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups julienned carrots
  • salt to taste
  • ground black pepper to taste
  • 2 tablespoons soy sauce

 

Instructions

  1. Bring a large pot of water to a boil. Cook spaghetti pasta in boiling water until al dente. Drain.
  2. Meanwhile, heat oil in a large skillet or wok over medium-high heat. Cook garlic in oil for 1 minute. Stir in onion, and cook until soft. Stir in chicken, and cook until juices run clear. Mix in the broccoli, cauliflower, and carrots, and cook for 2 to 5 minutes, stirring frequently. Season with soy sauce, salt, and pepper.
  3. Toss pasta with vegetables, and serve warm.

Peach Crisp

Ingredients 

  • (29-ounce) can peaches, sliced and drained
  • 1 (14.5-ounce) can peaches, sliced and drained
  • 1/2 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats (or quick oats, or Irish oatmeal)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 5 tablespoons butter, softened

Directions

  1. Gather the ingredients.

  2. Heat oven to 375 F; lightly butter an 8-inch square baking dish.

  3. Arrange drained peaches in baking dish.

  4. In a bowl, combine brown sugar, flour, oats, cinnamon, nutmeg, and butter. With a pastry mixer or your hands, blend ingredients until crumbly.

  5. Sprinkle oat mixture evenly over peaches.

  6. Bake for 30 minutes or until topping is nicely browned.

  7. Serve warm with your creamy topping of choice, if desired.
