Spinach and Goat Cheese Crostini

Ingredients 

  • 4 tablespoons extra-virgin olive oil
  • Eighteen 1/2-inch-thick slices baguette
  • Kosher salt and freshly ground black pepper
  • 2 cloves garlic, 1 whole and 1 finely chopped
  • 2 tablespoons pine nuts
  • Pinch crushed red pepper flakes, plus more for garnish (optional)
  • 8 ounces spinach, hard stems removed
  • 1/2 teaspoon freshly grated lemon zest
  • 3 ounces fresh goat cheese, crumbled

 

Directions

  1. Preheat the oven to 400 degrees F.
  2. Use 2 tablespoons of the oil to brush both sides of the bread slices. Arrange on a baking sheet and sprinkle lightly with salt and pepper. Bake until golden, flipping halfway through, about 7 minutes. While the toasts are hot, rub both sides with the whole garlic clove and return the bread to the baking sheet.
  3. Toast the pine nuts in a large skillet over medium heat, swirling, until lightly golden, about 3 minutes. Transfer to a medium bowl. Add the remaining 2 tablespoons olive, minced garlic, and red pepper flakes to the skillet and cook, over medium heat and frequently stirring, until the garlic is soft, about 1 minute. In batches, add the spinach, sprinkling with salt after each new addition, until wilted and tender. Transfer to the bowl with the pine nuts, add the lemon zest, and toss well. Drain the mixture in a colander and then roughly chop it.
  4. Divide the spinach mixture among the toasts and top each with some crumbled goat cheese. Bake just until cheese starts to melt, 3 to 5 minutes. Sprinkle with more red pepper flakes if using and serve warm.

Sweet Potato Black Bean Enchiladas with Avocado Lime Crema

Ingredients:

 

  • 2 medium sweet potatoes, diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1/2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 (15 oz) can black beans, rinsed and drained
  • 1/2 cup fresh or frozen corn
  • 1 1/2 cups shredded Mexican cheese blend
  • 8 soft corn tortillas*

 

For the enchilada sauce:

  • 2 teaspoons olive oil
  • 1 small white onion, finely minced
  • 3 cloves garlic, minced
  • 2 1/2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1 (15 ounces) can tomato sauce
  • 2 tablespoons tomato paste
  • 1/2 cup water (or broth of choice)
  • 1/2 teaspoon apple cider vinegar
  • Salt and pepper, to taste

 

For the avocado lime crema:

  • 1/4 cup nonfat plain greek yogurt
  • 1/2 ripe avocado
  • 1 lime, juiced
  • 1/4 cup cilantro
  • 1/8 teaspoon salt
  • Garnish: chopped cilantro

 

Instructions:

 

  1. Preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper. Add diced sweet potatoes and drizzle with olive oil; add spices and salt on top, then give the sweet potatoes a toss so that they are evenly coated with olive oil and spices. Bake for 25-30 minutes or until sweet potatoes are fork-tender.
  2. While the sweet potatoes are cooking, make the enchiladas sauce: Heat oil in a medium pot over medium-high heat. Add in onions and garlic and sauté for 5 minutes or until onions become translucent. 
  3. Add in chili powder, cumin, oregano, salt and stir for 30 seconds to allow the spices to cook a bit. Stir in tomato sauce, tomato paste, water, and apple cider vinegar, then bring to a boil. 
  4. Reduce heat to low and simmer for about 5 minutes, then remove from heat. Season with additional salt and pepper to taste, if necessary.
  5. Keep heat in the oven once sweet potatoes are done cooking. Add sweet potatoes to a large bowl and mix with black beans, corn, and 1/4 cup enchilada sauce. 
  6. Spray a 9×11 inch pan with nonstick cooking spray, add 1/4 cup enchilada sauce to the bottom of the pan, and spread evenly.
  7. Take a tortilla, then fill with 1/3 cup of mixture, one tablespoon of shredded cheese, and one tablespoon of enchilada sauce. Roll the tortilla up and place seam side down in the pan. 
  8. Repeat with each tortilla and place tightly next to each other. Pour remaining enchilada sauce, then cheese on top. Bake for 20-25 minutes.
  9. While the enchiladas are baking, you can make the avocado lime crema. In a blender or food processor, add the avocado, greek yogurt, lime juice, cilantro, and salt. Blend until smooth and creamy. Add a tablespoon or two of water to thin out if necessary.
  10. Once enchiladas are done baking, drizzle or spread the avocado lime crema on top. Garnish with extra cilantro and hot sauce, if desired. It makes eight enchiladas total, serving size two enchiladas per person.

Triple Chocolate–Peppermint Cookies

Ingredients

  • 5 peppermint candy canes (about 2 1/2 ounces)
  • 15 red and white peppermint chocolate kisses (about 2 1/2 ounces)
  • 3 (4-ounce) white chocolate baking bars, chopped
  • Pink food coloring gel
  • 5 cups unbleached all-purpose flour (about 21 1/4 ounces)
  • 1/2 cup red Dutch-process unsweetened cocoa 
  • 1/2 cup Dutch-process cocoa blend 
  • 1/2 cup crushed chocolate wafer cookies (2 ounces)
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons kosher salt
  • 2 cups unsalted butter (16 ounces), chilled and cut into 1/2-inch pieces
  • 3 cups granulated sugar
  • 4 ounces semisweet chocolate chips, melted and cooled
  • 4 large eggs
  • 1 (12-ounce) package semisweet chocolate chips

 

Directions

Make the peppermint bark

Step 1 – Pulse candy canes and chocolate kisses in a food processor until finely chopped, 10 to 14 times. Set aside. Bring 1 inch of water to a simmer in a medium saucepan over medium. Place chopped white chocolate in a medium heatproof bowl, and place over simmering water, ensuring the base of the bowl does not touch the water. Heat, stirring often, until chocolate is melted and smooth, about 6 minutes.

 

Step 2 – Remove from heat; stir in candy cane mixture and 1 drop of food coloring gel until incorporated. Pour chocolate mixture onto a parchment paper-lined baking sheet; spread into a 12- x 10-inch rectangle. Freeze, uncovered, until firm and set about 2 hours. Break or cut the bark into 1/2-inch pieces. Store in an airtight container in the freezer until ready to use, up to 1 week.

 

Make the cookies

Step 3 – Stir together flour, red Dutch-process cocoa, cocoa blend, crushed wafer cookies, baking powder, and salt in a large bowl; set aside.

 

Step 4 – Add butter and sugar to the bowl of a heavy-duty stand mixer fitted with a paddle attachment. Beat on medium speed until light and fluffy, about 5 minutes. Add melted semisweet chocolate, and beat until combined. Add eggs, 1 at a time, beating until well combined after each addition. With the mixer running on low speed, gradually add flour mixture, beating until just incorporated. Stir in chocolate chips. Wrap dough tightly in plastic wrap, and refrigerate at least 4 hours or up to 3 days.

 

Step 5 – Preheat the oven to 375°F. Using your hands, roll dough into 24 balls (about 3 ounces each). Place 6 dough balls 2 inches apart on a parchment paper-lined baking sheet (keeping remaining dough balls chilled). Bake in the preheated oven until cookies are set but still soft, 12 to 16 minutes. Remove from the oven, and immediately top cookies with 6 to 8 peppermint bark pieces, slightly inserting edges of bark into warm cookies to hold in place. Let cookies cool on the baking sheet for 5 minutes. Serve warm, or transfer to a cooling rack to let cool completely for about 30 minutes. Repeat with remaining cookie dough balls and peppermint bark.
