Classic Ambrosia Salad Recipe

This fun and delicious salad recipe is perfect for eating healthy but also enjoying a tasty meal! The combination of ingredients will provide you with a tangy yet sweet treat. We recommend sitting outside and eating this salad while enjoying the beautiful summer weather!

Ingredients 

  • 1 1/2 c. Cool Whip
  • 1/2 c. sour cream
  • 3 c. mini marshmallows
  • (15-oz.) can mandarin oranges, drained
  • 1 c. chopped fresh pineapple
  • 1 c. shredded coconut
  • 3/4 c. halved maraschino cherries (stems removed), drained
  • 3/4 c. toasted pecans

Directions

  1. In a large bowl, fold together Cool Whip and sour cream. Add oranges, pineapple, cherries, coconut, pecans, and marshmallows and stir gently.
  2. Cover and refrigerate for at least 1 hour and up to overnight.

Apple Pear Salad Recipe

Apple Pear Salad with Pomegranate Vinaigrette

Ingredients 

  • 1/4 cup Pomegranate juice
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup extra-virgin olive oil

Directions

Pomegranate Vinaigrette

  1. In a large measuring cup, combine Pomegranate juice, honey, vinegar, and mustard. Whisk together until well-combined. Continue to whisk as you add in olive oil to emulsify. Pour dressing into serving container and set aside.

Apple Pear Salad

  1. In a medium bowl, pour about 1/2 cup of Pomegranate Vinaigrette. Core and thinly slice apples and pears, adding to the bowl and tossing in the vinaigrette.
  2. In another large serving bowl, combine salad greens, roasted pecans, bleu cheese crumbles and pomegranate seeds. Using a slotted spoon, remove fruit from dressing and add into the salad bowl.
  3. Serve with dressing Pomegranate Vinaigrette Dressing.

Quick Tip – This salad is perfect anytime of year, but really, really shines during the holidays.

Honey Lime Fruit Salad Recipe

Ingredients 

  • 6 cups fresh fruit cleaned and cut up as needed
  • 2 tablespoons pineapple juice
  • 1 tablespoon fresh lime juice
  • 2 tablespoons honey

 

Directions

  1. Start by cleaning all of the fresh fruit and then cutting any of fruit needed – such as hulling and slicing strawberries and cutting pineapple into chunks. Then add all of the prepped fresh fruit to a large bowl.
  2. Reserve about 2 tablespoons of pineapple juice from the pineapple to use along with the dressing.
  3. Once all of the fruit is prepped, whisk together the pineapple juice, lime juice and the honey in a small bowl and then pour it over the fruit. Then give the fruit a gentle toss in the dressing to make sure that all of the fruit is well coated in the dressing.

 

Quick Tip – Serve immediately or within the next 15 minutes.

Solanum tuberosum, more commonly known as potatoes, are one of the most popular crops from around the world. Potatoes are often boiled, mashed, fried, steamed, and baked. Potatoes can definitely be considered a versatile vegetable. At E Armata Inc., located in Hunts Point Produce Market, we carry a wide variety of potatoes including, Eastern, Purple, Yukon gold, Idaho, Red, Rutabaga, Russet, White, and Yams. Different types of potatoes have different qualities, as grouped below. 

Potatoes can be grouped in different categories such as starchy, waxy, and all-purpose. 

  • Starchy: Contains Russets, Idaho’s, and many Yam varieties, that are high in starch. They are ideal for baking, frying, boiling, and mashing because of their low-moisture, fluffy, and absorbent qualities. Starchy potatoes tend to not hold their shape after cooking.
